I remember seeing a list of equivalently geared classes somewhere with defensive parses or something. I wish I could remember where. (warrior forums maybe?) It listed the class, then dps taken over time. Monks were right up there with knights as I recall. Just going off the top of my head, it was something like:
warrior: 110
monk: 125
pal/sk: 130
ranger: 155
shaman was at 185 or so i think.

I want to say it was done a couple years ago, with toons in anguish gear tanking HoH mobs or something. I'm sure the monk damage would be much spikier though, since they rely mostly on avoidance, dodge, block, and such.

Granted, it's about 3 years old and doesn't include the recent mitigation improvements for monks, bards, and clerics, so take it as you will, but it's interesting that monks actually mitigate worse than almost any other class, yet their avoidance is enough to bring them back up to #2 on average dps taken.

looking from a knight to a monk also dont forget shield ac... it will help alot... thats ac seperate fromt he cap that is already higher than the monk. that plus shield block and an extra set of hp AAs gives them the edge gearwise. Even equivalent AC the AC does mroe on a sk/pally. Monks will destroy the sk/pally in dps but much more survivability opening mroe content. Plus the SK taps help alot on taht... pally has buffs to increase himself and shaman a lil more. Both will tank better than monk unles the monk is CoA geared and sk is qvic geared then maybe i can accept taht difference.

Shaman pair best with plate tanks IMO.

Don't forget warriors as a side kick. When things get out of control none of the other tanks can compete. SKs are a good choice when pulling is an issue. As a duo I don't think pallies have as much to offer as those two though. I wouldn't consider light tanks, they might do more dps but if things go bad (and sooner or later they will) they are much less able to cope.

3 best classes to duo with a shammy imo, would be Paladin, SK, or Berserker. Pally you can duo undead and tear them apart and grind xp/aa's fast and easily and with WoT they can keep themselves alive, allowin the shammy to dps as well. Good berserkers can tank just fine when tryin to xp and their dps is INSANE. Sk's can tank, snare, lifetap, whole 9 yards.

Not boring for you to play maybe but for me they are don't say what people should think just because thats how you feel about it.
