The Spirit Realm

As I do not usually use arrows, my AMMO slot is usually empty. I think this might be a wasted opportunity - are there any items I can quest, camp, or buy in bazaar that I could place there that gives me increased stats and/or foci and abilities?

Nothing in the ammo slot will count for stats on your character. Even if the item has stats, it just doesn't work that way.

For the reason I usually just store my smithing trophy there so I can summon an extra bag when I need it.

EDIT: And I have that clicky from faction farming. Its nice to have, and regardless to the description works on live mobs just fine. If only the recast timer was a little lower.

You can use the slot for some utility type of clicks. Non-knights keep their mounts there. You could keep various LoN claim item clickies there (Kiss, Scales), or /-type items.

I keep the /claim familiar of the sokokar there now for easy access to the decent HP buff.

Weird, I went to Vald last night and the quest giver wasn't up.

I keep a different familiar in each bandolier ammo slot, that way I only have to bando to bring it up instead of searching through my bags.

Primary in my ammo though is my Rusty Oil Spitter, the snare clicky from beza

That Rusty Oil Spitter is sweet. How rare is that drop? I need the AC aug from that instance anyway, would give me an additional incentive to camp it.

all the clickies are exceedingly rare. Like, the augments are rare. Less than one per full instance clear. Clickies are MUCH more rare. If you decide to camp these, I recommend just clearing all the outside mobs and starting over w/o even entering the tower.
