Fire pet at 75+ (iirc, might have extended back to TSS pet) is a nuker, w/ very good dps (takes a good few pet AAs to surpass it's dps).
Air is a rogue, so very dependent on positioning. Best dps w/ AAs and good position.

Air pet is monk not pally has really high avoidance but lower mitigation than earth the stun is an innate from race like the warrior earth pets root. Water is a rogue and Fire post 50 is a wizard.

Unless air pets were changed in SoD, they're a pally

Have a look at for a deeper insight.
Wild estimate what I understood:
Airpet: best Tank if mobs mostly coming single and stunnable. His strong points are the stun, if I remember right a 3 second stun every 12 seconds and his high avoidance. Also a very good dps, so best allrounder.
Earth Pet: best Tank specially for Stun immune mobs or multibles. Highest innit HP and mitigation, but not as good in avoidance as the Airpet. Roots.
Fire: usually highest dps if low on AAs (if not facing particular resistant mobs), but not a lot of tanking abilities. When attack called it will start nuke from where it is. If it happends to be in meleerange it will melee also. Place it close to the tankspot and it will nuke + meele.
Water: best dps if taken care of beeing always in the back of the mob and supported by a good amount of AAs. Backsteps nice. With low AAs firepet should be better dps andalso you don't need as much to take care of positioning.

Another thing is if you have a less then stellar tank, and Air pet can be a big help.
As a monk tank, my cleric has commented she can see the differnce especially with 2 air pets on the mob.
